These juicy, lightly seasoned chicken bites are delicious, easy, and nutritious. They are a great addition to any salad, served alongside veggies, or as a protein addition to a whole grain or cauliflower rice bowl!


I recommend that you make double batch of this healthy chicken recipe for leftovers that can be used in limitless ways later in the week.


NUTRITION PER SERVING -- (4oz/about 6 bites--makes about 8 servings per recipe)

INGREDIENTS

  •  2 lbs. boneless, skinless chicken breast filets
  •  1 tsp. onion powder
  •  1 tsp. garlic powder
  •  1 tsp. dried oregano
  •  1 tsp. kosher salt
  •  ½ tsp. black pepper
  •  1-2 Tbs. extra virgin olive oil


DIRECTIONS

1. In a small bowl, combine onion powder, garlic powder, dried oregano, salt, and pepper. Set aside.

2. Pat dry chicken, cut into 1-inch cubes, and place in a large bowl.

3. Add olive oil to chicken and mix (use enough to very lightly coat the chicken – about 1-2

Tbs). Then sprinkle on seasoning mixture a little at a time and stir to coat the chicken.

4. Set your air fryer to 375 degrees. Place the chicken in the tray in an even layer (depending

on size of your air fryer, you may need to do this in batches). Air fry for 10-12 minutes or

until cooked through – tossing halfway through cooking.

5. Enjoy!


RECIPE NOTES AND TIPS

  • Store leftovers in the fridge for up to 5 days.
  • Feel free to experiment with different spices and seasonings for a slightly different flavor.
  • You can add something like paprika or chili powder instead of the oregano for a change.
